Sicilian Almond-Orange Cake

Here’s a simple favorite from my own table—one that feels close to Mimi’s world in Seeds of the Pomegranate, where food and memory are always intertwined..



Ingredients:


  • 1 ½ cups almond flour

  • ½ cup all-purpose flour

  • ¾ cup sugar

  • 3 eggs

  • ½ cup olive oil

  • Zest of one orange

  • ½ tsp baking powder

  • Pinch of salt


Instructions:


  • Preheat oven to 350°F.

  • Whisk eggs and sugar until light. Add oil and orange zest.

  • Fold in dry ingredients and pour into a greased 8-inch pan.

  • Bake 30–35 minutes, until golden and fragrant.

  • Dust with powdered sugar and enjoy warm—preferably with coffee and a good story.
