Sicilian Almond-Orange Cake
Here’s a simple favorite from my own table—one that feels close to Mimi’s world in Seeds of the Pomegranate, where food and memory are always intertwined..
Ingredients:
1 ½ cups almond flour
½ cup all-purpose flour
¾ cup sugar
3 eggs
½ cup olive oil
Zest of one orange
½ tsp baking powder
Pinch of salt
Instructions:
Preheat oven to 350°F.
Whisk eggs and sugar until light. Add oil and orange zest.
Fold in dry ingredients and pour into a greased 8-inch pan.
Bake 30–35 minutes, until golden and fragrant.
Dust with powdered sugar and enjoy warm—preferably with coffee and a good story.
